hand wrapped in grape leaves and washed in pear brandy. moist. creamy. complex.

Rolf Beeler Jersey Blue(Switzerland)
incredibly creamy, one of the best blue cheeses in the world.

Rossini Blue (Italy)

washed in amarone wine.

Taleggio  (Bergamo, Italy)

thin crust washed with sea water. a strong odor, but its flavor is comparatively mild with an unusual fruity tang.

Westcomb cloth bound cheddar (Somerset, England)
raw cow's milk cheddar. Creamy with a slight tang, followed by hints of mild caramel.
